  • 1 pork tenderloin of approximately 600 grams.
  • ¼ cup olive oil
  • ½ cup of white wine
  • 3 cloves of garlic
  • Salt and pepper to taste
  • Rosemary, thyme and/or parsley to taste
  • Juice of one lemon

Before starting with the preparation of this pork tenderloin recipe, you have to preheat the oven to 190ºC and prepare the meat. In this process you must clean the tenderloin of any excess fat and season it with salt and pepper on all sides. In addition, it is important to let the sirloin steak cool down to prevent it from getting cold inside after cooking. 

Then you prepare the marinade. To season your tenderloin, chop the garlic cloves and mix them with the olive oil, lemon juice, rosemary, parsley and thyme in a small bowl. Depending on your taste, you can add other ingredients as well. 

For example, if you are more of a mustard and honey person, you can prepare a sauce consisting of two tablespoons of mustard, two tablespoons of honey and two tablespoons of olive oil. No matter which option you choose, it is essential to make sure that all the meat is well coated. To enhance the flavor, it is advisable to marinate the meat in the refrigerator for a while afterwards (optional). 

After this step, and before baking the meat, it is time to seal the sirloin. Heat it in a frying pan over medium-high heat, using a little olive oil. In general, you should sear each side for about three minutes to ensure an intense flavor and juicy texture. 

Now you can put the sirloin in the oven. Place it on a tray, pour the wine and the leftover marinade. Then, you should bake the meat for 20 to 25 minutes, depending on whether you prefer the sirloin medium or more done. Once ¾ of the time has passed, you should turn it once.

After the baking process, you can almost serve the baked sirloin. Let it rest for a few minutes so that the juices settle, cut it into medallions and serve it with the sauce that remains in the tray. You can accompany the meat with the garnish of your choice, either baked potatoes, steamed vegetables or a mixed salad.
